Our Hummus and Sun-Dried Tomato Spinach Tortilla Wrap is a satisfying plant-based lunch option. Simply spread your favourite hummus onto Dempster’s® Spinach 10” Tortillas and top with sundried tomatoes, sprouts and other veggies to keep this recipe light, flavourful and vegetarian friendly. Serves four.

INGREDIENTS

  • 4 Dempster's® Spinach 10" Tortillas
  • 1/2 cup (125 mL) hummus
  • 1/2 cup (125 mL) chopped sun-dried tomatoes
  • 2 cups (500 mL) sprouts
  • 2 cups (500 mL) grated carrots
  • 2 cups (500 mL) grated zucchini

DIRECTIONS

  1. Spread hummus down along center of each tortilla, leaving small border at either end.
  2. Sprinkle with sun-dried tomatoes.
  3. Top with sprouts, carrots and zucchini.
  4. Fold up bottom of tortilla over filling, then fold in sides and roll up tightly.
  5. Cut each wrap in half.
