Cheese Taquitos

Crispy, crunchy, cheesy goodness, the challenge is... who can eat just one? These Taquitos are delicious on their own but loading them up with fresh toppings and crema will take them to a whole other level.

INGREDIENTS

  • 16 Dempster’s® Original Medium Tortillas
  • 2 cups Cream Cheese, softened
  • 2 cups Shredded Double Cheddar Cheese Blend
  • 1/4 cup Black Beans, cooked
  • 1/4 cup Frozen Corn, thawed
  • Vegetable Oil Cooking Spray
  • 2 cups Shredded Lettuce
  • 1 cup chopped tomato
  • 1/2 cup Crumbled Queso
  • 1/2 cup Crema
  • Cilantro, for garnish

DIRECTIONS

  1. Preheat the oven to 425°F (218°C)
  2. Spread a thin layer of cream cheese on each of the tortillas, divide the cheese sprinkled evenly between them
  3. In a bowl mix together the black bean and corn. Spoon mixture evenly between the Tortillas lengthwise, 1 inch from the bottom
  4. Roll tightly into a cigar form and place in a baking dish seam side down
  5. Once all Tortillas are rolled spray them with oil, and place them into the oven and bake until toasty and golden, about 20-25 minutes (Substitute oven for air fryer set to 375°F and cook in batches for 3-4 minutes, or until golden brown)
  6. Remove from oven, serve with toppings and garnish with cilantro
  7. Serve with Salsa.
