California Sandwich Rolls are built to resemble sushi rolls, giving your lunch a fun and unexpected twist. Featuring easy-to-grab staples like Dempster’s® White Bread, cream cheese, imitation crab and fresh veggies, this sandwich is light, delicious and easy to make. The attractive rolls also make great party appetizers. Serves four.

INGREDIENTS

  • 5 slices Dempster's® White bread
  • 1/4 cup (60 mL) softened cream cheese
  • 1 tbsp (15 mL) mayonnaise
  • 1 tbsp (15 mL) green onion
  • 4 sticks surimi crab meat
  • 1/2 cucumber, cut into matchsticks
  • 1 ripe avocado, peeled, pitted and sliced into matchsticks

DIRECTIONS

  1. Cut crusts from bread; using rolling pin, roll to flatten bread slices. Stir together cream cheese, mayonnaise and green onion over bread slices.
  2. Cut sticks of surimi to length of bread and place across bottom of slice along with some cucumber and avocado. Roll up and place seam side down on cutting board; slice each roll into 4 rounds.

Tip: Season cream cheese mixture with wasabi paste for an added kick.
