Mexican Pinwheels



Prepare ahead and bake when your guests arrive.

 

Makes about 5 dozen slices

Preparation Time: 15 min.

Chilling Time: 2-24 hours

Baking Time: 18 min.

 

 

TIPS:

  • Try ham and cheddar cheese for another great taste.

  • Replace fresh cilantro with 1 tbsp (15 mL) dried cilantro leaves.

  • For a delicious snack or cracker to serve with dips, brush your favourite DEMPSTER’S Tortilla with melted butter. Poke holes in it with a fork to avoid puffing. Sprinkle with Tex-Mex seasoning and bake at 450°F (230°C) about 6 minutes or until crisp. Cool and break into pieces.

INGREDIENTS:

DEMPSTER’S Original, Sun Dried Tomato or Cheese Tortillas (10”/25 cm)

8 oz

cream cheese, softened

1 cup

shredded Monterey Jack cheese

1 cup

diced cooked chicken

3 tbsp

finely chopped tomato, drained

3 tbsp

chopped fresh cilantro


DIRECTIONS:

In a mixing bowl, combine first 5 ingredients. Mix well.

Spread filling evenly over Dempster’s tortillas. Roll up tightly. Wrap in plastic wrap and refrigerate 2 to 24 hours.

Cut rolls into ½“ (1 cm) slices. Place on parchment lined or greased baking sheet.

Bake in preheated oven at 350°F (180°C) for 15 to 18 minutes or until hot and cheese is starting to melt.
